Pie-xperiments
I had coffee hour at church today, and you know that means baking time.
Look. I have built-in taste testers at home. But they are pickypants pains. Boy has declared he does not like pie. Any pie, any kind. Man is extremely selective and getting more selective by the hour. No peaches, pears, plums, blackberry, strawberry... I’m down to blueberry and apple, and the latter I’ve not made into a pie yet.
I make a kickass key lime pie. Man snubs it - “I don’t like key lime.” Philistine. Boy requests more chocolate chip cookies.
So when I get the chance to experiment on other humans, I jump on it. I need willing victims!
This week’s selections included my trusty key lime pie, blueberry vanilla muffin bread, Clifty sugar cream pie and my standby cheese and crackers, ranch cheese spread, grapes and bagels. Plus chocolate chip cookies, which I apparently will make for every gathering forever.
The sugar cream pie comes from the Old Clifty Inn in Madison, Indiana. I was there for a book signing a few years ago, and I could not afford to stay at the inn, but had a delightful meal there. I had the very last piece of sugar cream pie left that day and fell in love with it. The recipe booklet cost $1.99.
My version was not quite as good. It was looser and turned a bit soft in the plate. Hmm. Perhaps more cornstarch in the filling? Perhaps I didn’t simmer it long enough on the stove, or perhaps the church hall was too warm - the air conditioner was out today and we were slightly steaming. Soft or not, the flavor was right. The recipe did not specify what kind of milk to use, and we stock skim in our house. Perhaps whole milk or even half and half would thicken it up. Next time!
The key lime turned out perfectly, and it was devoured. The blueberry bread was a tad more crumbly than I’d like, but it disappeared just as fast. It can be made into muffins, which might hold better. I got lazy and didn’t toss the blueberries in flour first, so they sank some. Troublesome critters.
I still have three more cups of blueberries, so I’d best find a use for them quick. Too many for muffins, too few for a pie...
